  • 1 salmon fillet (about 150g)
  • 2 cups chopped romaine or mixed greens
  • 1 avocado, diced
  • 2 tbsp dried cranberries
  • 1 cup diced tomatoes
  • ½ cup thinly sliced red onion
  • 2 tbsp crumbled feta cheese
  • 1 tbsp chopped walnuts (optional, for crunch)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar (or lemon juice)
  • 1 tsp Dijon mustard
  • Salt & pepper, to taste

Instructions

  1. Season the salmon fillet with olive oil, dill (or parsley), salt, and pepper. Grill or pan-sear over medium heat for about 4-5 minutes on each side until cooked through. Let it rest before flaking.
  2. In a large bowl, mix the chopped greens, diced avocado, cranberries, tomatoes, red onion, feta cheese, and walnuts if using.
  3. For the dressing, whisk together olive oil, balsamic vinegar (or lemon juice), Dijon mustard, salt, and pepper in a separate bowl.
  4. Assemble the salad on a plate by adding the flaked salmon and drizzling with dressing.
  5. Serve immediately while warm.
