  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • Juice of lemon
  • tsp paprika
  • tsp dried oregano
  • Salt & pepper to taste
  • 1 cup cooked brown or white rice
  • 1 tbsp chopped parsley
  • 1 tsp olive oil
  • Salt to taste
  • 2 large carrots, sliced into rounds
  • 1 tbsp olive oil
  • tsp honey or maple syrup
  • Salt & pepper to taste
  • tsp thyme or parsley
  • 3 tbsp Greek yogurt
  • 1 tbsp mayonnaise
  • tsp Dijon mustard
  • 1 garlic clove, minced
  • Salt & pepper to taste
  • Optional: pinch of smoked paprika

Instructions

  1. Marinate chicken with olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper for at least 10 minutes.
  2. Grill or pan-sear chicken for 5-6 minutes on each side until cooked through.
  3. Mix cooked rice with parsley, olive oil, and salt.
  4. Sauté sliced carrots in olive oil; glaze with honey/maple syrup and season.
  5. Combine Greek yogurt, mayonnaise, mustard, garlic, salt, and pepper for the sauce.
  6. Assemble by layering rice in bowls topped with chicken, carrots, and creamy sauce.
