  • 2 lbs beef chuck, cubed
  • 3 tbsp olive oil
  • 1 onion, diced
  • 2 ribs celery, diced
  • 4 carrots, diced
  • 3 garlic cloves, minced
  • ¾ cup dry red apple vinegar
  • 6 cups low-sodium beef broth
  • 1 cup pearled barley
  • Fresh thyme
  • Salt and pepper
  • ¼ cup parsley, minced

Instructions

  1. Season beef chuck with salt and pepper. Heat olive oil in a large pot over medium-high heat and sear beef until browned on all sides. Remove from pot.
  2. In the same pot, add more olive oil if needed, then sauté onion, celery, and carrots for 5 minutes until softened. Add garlic and cook for another minute.
  3. Pour in red apple vinegar to deglaze the pot, scraping up any browned bits as it reduces by half.
  4. Return seared beef to the pot along with low-sodium beef broth and thyme sprigs. Bring to simmer and cook for 45 minutes.
  5. Stir in pearled barley and continue simmering for an additional 45–60 minutes until barley is tender.
  6. Adjust seasoning with salt and pepper before serving. Garnish with minced parsley.
