  • 1/2 cup unsweetened apple sauce
  • 1/2 cup maple syrup
  • 1/4 cup molasses
  • 2 eggs
  • 2 teaspoons vanilla extract

  • 1 1/2 teaspoons ground ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. Blend the oats in a blender until they reach a flour-like consistency.
  3. Add apple sauce, maple syrup, molasses, eggs, vanilla extract, baking powder, cinnamon, ground ginger, nutmeg, and salt to the blender. Blend until smooth.
  4. Pour about ½ cup of batter into each muffin mold and bake for 20-25 minutes or until a toothpick comes out clean.
