  • 3/4 cup brown sugar
  • 1/4 cup white granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/4 cup molasses
  • White granulated sugar for rolling
  • 1 1/2 cups powdered sugar (sifted)
  • 1/4 tsp ground cinnamon
  • 2 tbsp espresso or strong coffee (adjust as needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, ground ginger, cinnamon, ground clove, and espresso powder.
  3. In another bowl, cream the softened butter with both sugars until light and fluffy. Mix in the egg, vanilla extract, and molasses until well combined.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Roll dough into one-inch balls, coat in granulated sugar, and place on baking sheets.
  6. Bake for about 13 minutes or until edges are firm but centers remain soft.
  7. Allow cooling before drizzling with a glaze made from powdered sugar, ground cinnamon, and espresso.
