  • 4 large bell peppers
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese

  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds. Set aside.
  3. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant. Add shrimp and cook until pink. Remove shrimp from skillet and chop.
  4. In a bowl, combine chopped shrimp, breadcrumbs, Parmesan cheese, salt, and pepper.
  5. Stuff each bell pepper with the mixture and place them in a baking dish.
  6. Bake for 25-30 minutes until the peppers are tender.
  7. Garnish with parsley before serving.
