  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp garlic powder
  • Salt & pepper
  • Fresh parsley, chopped (for garnish)
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 1 clove garlic, minced
  • 3 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • 1 cup milk

Instructions

  1. Boil the cubed potatoes in salted water until tender. Drain well. Add butter, milk, salt, and pepper to taste. Mash until creamy and smooth.
  2. In a large skillet over medium heat, add olive oil and butter. Season chicken breasts with garlic powder, salt, and pepper. Cook for about 6-7 minutes on each side until they are golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet used for the chicken, add more olive oil if needed. Sauté sliced onions, peppers, garlic, and mushrooms over medium-high heat until softened—about 5-7 minutes. Season with salt and pepper.
  4. On plates or bowls, place a generous scoop of creamy mashed potatoes. Top with the cooked chicken breasts surrounded by sautéed vegetables. Garnish with freshly chopped parsley.
