  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 1 lb mushrooms, quartered
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 3 tablespoons olive oil
  • 1/4 cup all-purpose flour
  • Bouquet garni (thyme, bay leaves, parsley)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, sliced carrots, and minced garlic until the onion is translucent.
  2. Season beef chunks with salt and pepper. Brown them in batches in the same pot until seared on all sides. Remove and set aside.
  3. Sprinkle flour over the sautéed vegetables and stir to coat evenly.
  4. Return the browned beef to the pot, add tomato paste and bouquet garni, then pour in beef broth.
  5. Bring to a boil, reduce to a simmer, cover, and cook for about 2 hours.
  6. In the last 30 minutes of cooking, sauté mushrooms separately until golden brown before adding them to the stew.
