  • 8 oz. dry rotini pasta
  • 9 oz. hard salami, chopped
  • 6.5 oz. pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • 8 oz. mozzarella pearls
  • ½ cup pepperoncini, sliced
  • Fresh basil, sliced thin
  • ½ cup olive oil
  • ¼ cup red apple vinegar vinegar
  • 2 garlic cloves, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook the rotini in salted boiling water until al dente. Drain and cool completely.
  2. In a bowl or jar, mix olive oil, vinegar, garlic, Italian seasoning, red pepper flakes, salt, and pepper to make the vinaigrette.
  3. Chop salami and pepperoni; halve tomatoes and olives; slice basil.
  4. In a large mixing bowl, combine cooled pasta with all prepared ingredients and toss with vinaigrette.
  5. Chill for at least 30 minutes before serving.
