  • 2 cups refried beans (or mashed black beans)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 2 cups enchilada sauce (red or green)
  • 1/4 cup diced onions (optional)
  • 1/4 cup chopped cilantro (optional)
  • 1 tablespoon oil (for greasing the dish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine refried beans with half the shredded cheese and onions if using.
  3. Grease a baking dish with oil. Spoon the bean mixture onto each tortilla, roll tightly, and place seam-side down in the dish.
  4. Pour enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  5. Cover with foil and bake for 20 minutes; remove foil and bake for another 10 minutes until cheese is bubbly.
  6. Allow to cool slightly before serving; garnish with cilantro if desired.
