Instructions

  1. Activate the yeast by combining warm water, sugar, and yeast in a small bowl; let sit for 5–10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil, stirring until the dough forms.
  3. Knead on a floured surface for 8–10 minutes until smooth and elastic or use a stand mixer with a dough hook for about 6 minutes.
  4. Place the dough in a greased bowl, cover with a damp towel, and let rise in a warm place for about 1–1½ hours until doubled in size.
  5. Punch down the dough, divide into two portions, shape into loaves, and place on a parchment-lined baking sheet.
  6. Cover loosely and let rise again for about 30–40 minutes until puffy.
  7. Preheat oven to 425°F (220°C), placing a shallow baking dish with water on the bottom rack to create steam.
  8. Brush loaves with olive oil and make slashes across the top; bake for 25–30 minutes until golden brown.
