Ingredients

  • Maple breakfast sausage (or turkey sausage)
  • Great northern beans
  • Corn kernels
  • Diced green chilies
  • Diced tomatoes with green chilies
  • Pure pumpkin puree
  • Chicken stock
  • Cream cheese

Instructions

  1. In a skillet, cook the crumbled maple breakfast sausage over medium heat until browned, about 8-10 minutes. Drain excess fat.
  2. In your crockpot, combine the cooked sausage with great northern beans, corn kernels, diced green chilies, diced tomatoes with chilies, pumpkin puree, chicken stock, cumin, chili powder, nutmeg, and black pepper.
  3. Stir everything well and cook on low for 6-8 hours.
  4. About 20-30 minutes before serving, add cream cheese in chunks to the crockpot. Stir occasionally until melted and fully incorporated.
