  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/4 teaspoon sesame oil
  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1/4 teaspoon salt
  • 1 avocado, sliced

Instructions

  1. Press the tofu to remove excess moisture, then cut into cubes.
  2. In a bowl, mix cornstarch, flour, garlic powder, salt, and pepper; coat the tofu cubes in this mixture.
  3. Heat oil in a skillet over medium-high heat; cook the coated tofu cubes until golden brown and crispy on all sides (about 8–10 minutes).
  4. In a small bowl, whisk together soy sauce, rice vinegar, honey, minced garlic, and sesame oil to make the teriyaki sauce.
  5. In a pot, bring vegetable broth to a boil; add brown rice and salt. Reduce heat to low and simmer until tender (15–20 minutes).
  6. To serve: Layer cooked rice in bowls or plates followed by sliced avocado and crispy tofu. Drizzle with teriyaki sauce.
