  • 12 French baguettes
  • Panko crumbs and breadcrumbs for breading
  • 2 tbsp lemon juice
  • 12 garlic cloves (minced)
  • ¼ tsp black pepper

  • ⅓ cup all-purpose flour
  • ½ tsp salt
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • ¼ cup Parmesan cheese (freshly grated)

Instructions

  1. Prepare the Caesar dressing by mixing mayonnaise, Greek yogurt, Dijon mustard, lemon juice, minced garlic, Parmesan cheese, salt, and pepper until smooth. Toss with chopped romaine and refrigerate.
  2. Pound chicken cutlets to an even thickness, then season with salt and pepper.
  3. Set up a breading station with flour mixed with smoked paprika, beaten eggs with salt, and panko/breadcrumb mixture combined with herbs and Parmesan.
  4. Dredge each cutlet in flour, dip in egg, then coat thoroughly with the breadcrumb mixture.
