  • 1 pint fresh blueberries
  • 1/4 cup white sugar
  • Juice of 1 lemon
  • 1 small bundle lemon thyme
  • 8 slices sourdough bread, each 1/4 inch thick
  • 4 oz white cheddar, grated
  • 4 oz whole mozzarella cheese, shredded
  • 4 tbsp butter
  • Flaky sea salt, for finishing

Instructions

  1. In a mixing bowl, combine the fresh blueberries, sugar, lemon juice, and lemon thyme. Mash gently until mixed but still chunky.
  2. Take two slices of sourdough bread. Spread blueberry filling on one slice, top with grated white cheddar and shredded mozzarella, then place another slice on top.
  3. Heat a cast iron skillet over medium heat and melt 2 tablespoons of butter. Cook each sandwich for about 3-4 minutes per side until golden brown and crispy.
  4. Sprinkle with flaky sea salt before slicing in half and serve warm.
