Ingredients

Scale
  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 6 strips beef bacon, chopped
  • 2 cloves garlic, minced
  • 12 oz fettuccine or spaghetti
  • 1 cup grated Parmesan cheese
  • 3 large eggs
  • 1 cup whole milk or half-and-half
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a large skillet over medium heat, add olive oil. Cook diced chicken until golden brown (5-7 minutes). Add chopped beef bacon and cook until crispy (4-5 minutes). Stir in minced garlic and sauté for another minute.
  3. In a mixing bowl, whisk eggs with Parmesan cheese, whole milk, salt, and pepper.
  4. Reduce skillet heat to low; add drained pasta to the chicken mixture. Quickly pour in the egg mixture while tossing with tongs until well combined.
  5. If necessary, gradually stir in reserved pasta water to achieve desired creaminess. Adjust seasoning before serving warm.
