  • 2 lbs fresh tomatoes (Roma or vine-ripened), halved
  • 1 whole head of garlic
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 2 cups vegetable or chicken broth
  • ½ cup heavy cream (or coconut milk)
  • ¼ cup fresh basil leaves
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place halved tomatoes on the baking sheet, drizzle with 1 tablespoon olive oil, and season with salt and pepper.
  3. Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and place on the baking sheet.
  4. Roast for 30-35 minutes until tomatoes are caramelized and soft; allow to cool slightly.
  5. In a large pot, heat remaining olive oil over medium heat; sauté chopped onion for about 5 minutes until softened.
  6. Squeeze roasted garlic cloves into the pot. Add roasted tomatoes with their juices, broth, and fresh basil.
  7. Puree using an immersion blender until smooth (or transfer in batches to a regular blender).
  8. Return mixture to pot; stir in cream (or coconut milk) and simmer for 5-10 minutes. Adjust seasoning if needed.
  9. Serve warm garnished with fresh basil or a drizzle of cream.
