  • ¼ cup diced sundried tomatoes
  • 3 garlic cloves (minced)
  • 68 cups chicken broth
  • 6 oz pasta (small shells recommended)
  • 1 cup heavy whipping cream
  • 3 cups fresh spinach
  • Optional: ¼ cup flour and 2 tablespoons tomato paste

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat. Add diced chicken seasoned with Italian seasoning, salt, and pepper. Cook until browned (4–5 minutes).
  2. Add onions, carrots, celery, sundried tomatoes, and garlic; sauté until translucent (3–4 minutes).
  3. Gradually sprinkle flour while stirring well; add tomato paste if using.
  4. Whisk in chicken broth continuously until smooth; deglaze the pot.
  5. Bring to a boil, add pasta and another teaspoon of Italian seasoning; cover and simmer for about 20 minutes until chicken is cooked through and pasta is al dente.
  6. Stir in heavy cream and spinach; simmer for an additional 5 minutes.
  7. Taste and adjust seasoning before serving.
