  • 4 medium-sized potatoes
  • 2 cups baby carrots
  • 2 tablespoons olive oil
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • Salt and pepper to taste
  • 1/2 cup milk (or plant-based milk)
  • 2 tablespoons butter (or dairy-free alternative)
  • 2 tablespoons honey (or agave syrup)
  • 1 cup chicken broth
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine olive oil, thyme, rosemary, salt, and pepper in a bowl. Rub this mixture onto the chicken breasts and roast in a baking dish for 25–30 minutes until cooked through.
  3. While the chicken roasts, peel and quarter the potatoes; boil them in salted water until tender (15–20 minutes). Drain and mash with milk and butter until smooth.
  4. In a skillet over medium heat, combine baby carrots with honey and butter; cook for about 5–7 minutes until tender.
  5. For the savory gravy, mix chicken broth with cornstarch in a saucepan over medium heat until thickened; season with salt and pepper.
