  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • 1 tsp ground coriander
  • 1 tbsp brown sugar
  • 1 can (13.5 oz) full-fat coconut milk

  1. Brown the beef in a large pot over medium-high heat until evenly browned on all sides; season with salt and pepper. Remove from pot and set aside.
  2. In the same pot, sauté onions, garlic, and ginger until the onions are translucent.
  3. Add the spice blend—red curry paste, turmeric, paprika, coriander, and brown sugar—and stir for about 2 minutes until fragrant.
  4. Incorporate the coconut milk and mix thoroughly before returning the browned beef to the pot.
  5. Bring to a gentle simmer, partially cover with a lid, and cook for 45-60 minutes until the beef is tender.
  6. Serve hot with rice on one side and crispy fries on another.
