  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14 oz) can full-fat coconut milk
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup beef broth
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 1/4 cup warm water
  • 1 teaspoon sugar

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in minced garlic and grated ginger; cook until fragrant.
  3. Add curry powder, cumin, turmeric, and optional cayenne pepper; cook for 30 seconds.
  4. Brown the beef on all sides before adding coconut milk, beef broth, tomato paste, salt, and pepper. Stir well.
  5. Bring to a boil, then simmer for about 45 minutes or until the beef is tender.
