  • ¾ cup (150g) granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 4 tablespoons (56g) unsalted butter, very soft and cut into small pieces
  • 2 large eggs at room temperature
  • ½ cup (118ml) full fat sour cream
  • 3 tablespoons (45ml) whole milk
  • 1 teaspoon (5ml) pure vanilla extract
  • 2 medium apples peeled, cored and diced into ½ inch cubes (2 cups or 240g)
  • 1 tablespoon (12g) granulated sugar (for apples)
  • 1 teaspoon ground cinnamon (for apples)
  • 1 ½ tablespoon (18g) granulated sugar (for topping)
  • ½ teaspoon ground cinnamon (for topping)
  • ⅔ cup (80g) powdered confectioner’s sugar (for glaze)
  • 1 tablespoon (15ml) whole milk (for glaze)
  • Pinch salt (for glaze)

Instructions

  1. Preheat your oven to 350°F (177°C). Line an 8×8-inch square baking pan with parchment paper, leaving a 2-inch overhang on each side for easy removal later.
  2. In a large mixing bowl or stand mixer, whisk together flour, sugar, baking powder, baking soda, and salt until evenly combined.
  3. Add the very soft butter pieces. Mix on low speed until the mixture resembles fine breadcrumbs.
  4. In a separate bowl, whisk together eggs, sour cream, milk, and vanilla extract until smooth.
  5. Pour this wet mixture into the dry ingredients. Beat on medium speed for about one minute until thick and creamy.
  6. In a medium bowl, toss the diced apples with granulated sugar and cinnamon until they are evenly coated. Set aside while preparing the rest of the cake.
  7. In a small bowl, combine granulated sugar and ground cinnamon. Stir together evenly.
  8. Spread about two-thirds of the batter into the prepared pan to create an even layer.
  9. Scatter the cinnamon-coated apples evenly over this layer.
  10. Drop spoonfuls of remaining batter on top of apples and gently spread to cover as much as possible.
  11. Sprinkle cinnamon sugar mixture evenly over the top.
  12. Bake in preheated oven for 25 to 28 minutes. Check doneness by inserting a skewer into the center; it should come out clean.
  13. Let cool slightly on a wire rack.
  14. In a small bowl, whisk together powdered sugar, milk, and pinch of salt until smooth.
  15. Drizzle glaze over warm cake; let set for about one hour before slicing.
