  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 1 medium zucchini, sliced
  • 3 garlic cloves, smashed
  • 1/4 cup light soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Cooking oil for frying
  • Optional: Ground black pepper to taste

Instructions

  1. Marinate chicken pieces in a mixing bowl with cornstarch, soy sauce, sesame oil, sugar (or honey), and optional rice vinegar for at least 30 minutes.
  2. Heat cooking oil in a wok or frying pan over medium-high heat.
  3. Add smashed garlic and marinated chicken; stir fry for about 2 minutes until chicken is no longer translucent.
  4. Remove chicken from the pan and set aside.
  5. In the same pan, add sliced zucchini and stir fry for about 5 minutes until tender.
  6. Return the chicken to the pan, add oyster sauce and optional black pepper; stir fry for another 2-3 minutes until everything is well combined and heated through.
