  • 2 tablespoons chicken butter
  • 2 large carrots, peeled and diced
  • 1 stalk celery, diced
  • 1 large yellow onion, diced
  • 3 tablespoons all-purpose flour
  • 32 ounces chicken broth
  • 1 cup 100% pure pumpkin
  • heaping 1/2 teaspoon ground cumin
  • 1/2 teaspoon pumpkin pie spice
  • 1 head garlic, halved crosswise
  • 1 1/2 pounds chicken breasts
  • 10 ounces frozen butternut squash or sweet potatoes
  • 1/2 cup whole milk
  • 1/2 lemon, juiced
  • kosher salt & ground black pepper, to season
  • 1/4 cup cold grated chicken butter
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1 large egg, lightly whisked
  • 1/3 cup 100% pure pumpkin
  • 1/4 cup whole milk
  • kosher salt & ground black pepper, to season

Instructions

  1. In a Dutch oven over medium heat, melt butter and sauté diced carrots, celery, and onion until softened.
  2. Dust flour over the veggies; stir well and cook for another minute before adding chicken broth.
  3. Stir in garlic, pumpkin puree, cumin, and pumpkin pie spice; bring to a boil then reduce to simmer.
  4. Add chicken breasts to the pot; cover and simmer until cooked through (10-15 minutes).
  5. Shred the chicken and return it to the pot along with butternut squash or sweet potatoes and whole milk.
  6. In a separate bowl, combine flour, baking powder, pumpkin pie spice, salt, and pepper; whisk together.
  7. Add grated butter; mix quickly by hand until coated in the flour mixture.
  8. In another bowl, whisk together egg, pumpkin puree, and whole milk; combine with dry ingredients gently until a thick dough forms.
  9. Drop tablespoon-sized dumplings into simmering soup; cover and cook for 8-10 minutes until puffy.
