Ingredients

Scale
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons pumpkin or chai spice blend
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup European style unsalted butter, cooled
  • 1 cup light brown sugar
  • 1/3 cup pure maple syrup
  • 1 large egg yolk, room temperature
  • 1/2 cup canned pumpkin, blotted
  • 2 teaspoons vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 1/2 teaspoon pumpkin or chai spice blend (for coating)

Instructions

  1. Prepare brown butter: Melt butter until browned, then cool for about 30 minutes.
  2. Blot pumpkin puree: Place it on paper towels to absorb excess moisture.
  3. Combine dry ingredients: Whisk flour, spice blend, baking soda, and salt together in a bowl.
  4. Mix wet ingredients: In another bowl, combine cooled brown butter, brown sugar, and maple syrup; add egg yolk and mix well.
  5. Incorporate pumpkin & extracts: Stir in blotted pumpkin puree and vanilla extract until combined.
  6. Fold in dry mixture: Combine dry and wet mixtures gently to avoid overmixing.
  7. Chill dough: Cover and refrigerate for at least 8 hours or overnight.
  8. Preheat oven to 350°F (177°C). Line cookie sheets with parchment paper.
  9. Roll cookies in spiced sugar before placing on sheets.
