  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese, granulated sugar, and vanilla until smooth. Refrigerate.
  2. For the cookie dough, cream together softened butter, light brown sugar, and granulated sugar until fluffy. Add egg yolks and vanilla; mix well.
  3. In another bowl, whisk together flour, black cocoa powder, baking powder, and salt. Gradually combine with wet ingredients until just mixed.
  4. Preheat oven to 350°F (175°C). Roll cookie dough into balls, flatten slightly, add cheesecake filling, and encase it. Shape back into balls.
  5. Bake on a lined baking sheet for 10-12 minutes or until edges are set. Cool on wire racks before serving.
