  • 1 ½ cups green bell peppers
  • 1 cup red bell pepper
  • 14.5 ounces black beans
  • ½ cup frozen yellow corn
  • 3 Tablespoons honey
  • 3 Tablespoons lime juice
  • 3 Tablespoons fresh cilantro (chopped)
  • 4 Tablespoons olive oil (divided)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground coriander
  • 1 teaspoon sea salt
  • ¼ teaspoon pepper
  • Corn or flour tortillas

Instructions

  1. Preheat oven to 425°F and grease a large baking sheet.
  2. In a bowl, combine sweet potato cubes with 3 tablespoons of olive oil and spices; mix well.
  3. Roast sweet potatoes for about 20 minutes, stirring halfway.
  4. Prepare green and red peppers in the same bowl with remaining 1 tablespoon of olive oil and seasoning; add to baking sheet after sweet potatoes have roasted for 20 minutes.
  5. Return to oven for another 20 minutes until all veggies are tender.
  6. Combine honey, lime juice, and cilantro in a small bowl for the sauce.
  7. Add black beans and corn to the baking sheet; drizzle sauce over everything and mix gently.
  8. Roast for an additional 10-15 minutes before serving in tortillas or over salad greens.
