  • 2 packages of Biscoff cookies (one for the crust, one for topping)
  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • Store-bought salted caramel sauce

Instructions

  1. Preheat your oven to 325°F (160°C). Crush one package of Biscoff cookies into fine crumbs and mix with melted butter. Press into the bottom of a springform pan.
  2. In a bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Pour in heavy cream and vanilla; mix until fully blended.
  3. Pour the filling over the crust and bake for about 60 minutes or until set but slightly wobbly in the center. Let cool in the oven for an hour.
  4. Refrigerate for at least four hours or overnight. Before serving, drizzle with salted caramel sauce and sprinkle crushed Biscoff cookies on top.
