  • 56 medium sweet potatoes
  • ¼ cup unsalted butter
  • ¼ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the sweet potatoes and slice them into thin medallions. Arrange them in a single layer in a baking dish.
  3. In a saucepan over medium heat, combine butter, brown sugar, water, cinnamon, cloves, nutmeg, and salt. Stir until melted and smooth.
  4. Brush three-quarters of the sauce over the sweet potato medallions. Cover with foil and bake for 45-50 minutes until tender.
  5. Remove from the oven and drizzle with remaining sauce. Top with pecans and mini vegan marshmallows.
  6. Switch to broil setting and broil for about 1–2 minutes until the marshmallows are golden brown.
  7. Let cool for 10–15 minutes before serving.
