  • 2 tablespoons olive oil
  • 4 yellow onions (thinly sliced)
  • 2 pounds Yukon Gold potatoes (washed and chopped)
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half or full-fat coconut milk
  • 1 teaspoon kosher salt
  • 1 cup Parmesan cheese (freshly grated)
  • Fresh herbs: chives, thyme, sage

Instructions

  1. Heat olive oil in a skillet over medium heat and add sliced onions. Cook for 40–50 minutes until caramelized.
  2. Boil chopped Yukon Gold potatoes in salted water for about 20 minutes until fork-tender. Drain.
  3. Mash the cooked potatoes in a large pot until smooth. Mix in butter, salt, and half & half (or coconut milk) until creamy.
  4. Stir in half of the caramelized onions and grated Parmesan cheese until well combined.
  5. Serve topped with remaining onions and sprinkle with fresh herbs.
