  1. Preheat your oven to 400°F (200°C). Wrap washed and trimmed beets in aluminum foil and roast for 45-60 minutes until tender. Let cool before peeling.
  2. In a food processor, blend the roasted beets, softened goat cheese, and dill or chives until well combined yet slightly chunky.
  3. Place plastic wrap on your countertop, spoon the beet-cheese mixture in the center, fold the wrap to form a log shape, and twist ends tightly.
  4. Refrigerate for at least 2 hours until firm. Unwrap and serve on a platter.
