  • 4 (8-inch) tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 cups chopped fresh spinach
  • 8 oz sliced mushrooms
  • Olive oil (optional)

Instructions

  1. Preheat your oven to 400F (200C).
  2. Microwave sliced mushrooms in a microwave-safe bowl for 2 to 3 minutes; drain any liquid.
  3. Lightly brush one side of each tortilla with olive oil and place the oiled side down on a baking sheet.
  4. On half of each tortilla, layer half the cheese, followed by spinach and softened mushrooms, then top with remaining cheese and fold.
  5. Bake for about 6 minutes, flip each quesadilla, and bake for an additional 6-7 minutes until golden brown.
  6. Allow to cool slightly before slicing into wedges.
