  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 teaspoons ground cinnamon

  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup vegetable oil or melted coconut oil
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • 1 and 1/2 cups peeled and shredded apple
  • 3/4 cup chopped walnuts (optional)
  • 1/2 cup granulated sugar (for topping)
  • 1 and 1/2 teaspoons ground cinnamon (for topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Reduce the fresh apple cider in a saucepan over medium heat until it thickens slightly (about 20 minutes). Allow to cool.
  2. Preheat the oven to 425°F (218°C) and prepare a muffin pan.
  3. In one bowl, whisk together flour, baking powder, baking soda, salt, and spices. In another bowl, mix reduced cider, oils, sugars, eggs, and applesauce until combined.
  4. Pour the wet mixture into the dry ingredients and gently fold in shredded apples.
  5. Fill muffin liners to the top with batter and bake at 425°F for 5 minutes; then reduce temperature to 350°F (177°C) for an additional 15–16 minutes.
  6. Cool on a rack before enjoying.
