  • 3 tbsp granulated white sugar
  • 1 3/4 cups all-purpose flour
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 6 oz cream cheese, cold
  • 2 tsp vanilla
  • 2 tbsp apple cider reduction from above
  • 1/4 cup granulated white sugar for topping
  • 1/4 tsp ground cinnamon for topping
  • 1/8 tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp salted butter, melted for topping

Instructions

  1. Prepare the apple cider reduction by boiling it in a saucepan until it reduces by half. Allow it to cool.
  2. For the cheesecake filling, beat cold cream cheese with granulated sugar until smooth, then mix in vanilla and reduced apple cider.
  3. In a mixing bowl, cream together softened butter and sugars until fluffy. Incorporate egg yolks and vanilla.
  4. Combine dry ingredients (flour, spices, baking powder, baking soda, salt) in another bowl and gradually add them to the wet mixture.
  5. Preheat the oven to 350°F (175°C). Scoop dough onto baking sheets lined with parchment paper, indent each ball, fill with cheesecake mixture, and cover with more dough.
  6. Brush melted butter on top and sprinkle with spiced sugar mix before baking for about 11-13 minutes until golden.
